Prosciutto-wrapped roast pork with maple glaze

Maple-glazed prosciutto-wrapped pork served with sweet potatoes - a perfect combination of sweet and savory flavors.
Ingredients:
  • 40.00 ml finely chopped fresh thyme leaves, plus extra sprigs to serve
  • 4 garlic cloves, crushed
  • 18.20 gm extra virgin olive oil
  • 10 thin slices prosciutto
  • 2 x 800g pieces pork scotch (neck)
  • 1kg orange sweet potato, peeled, cut into 1cm-thick rounds
  • 1 red onion, sliced into rounds
  • 40g butter, melted
  • 111.38 gm maple syrup
  • 400g snow peas, trimmed, steamed
  • 250.00 ml frozen peas, steamed
Instructions:
  • Preheat your oven to 160C (140C fan-forced).
  • Mix thyme, garlic, and oil in a small bowl. Arrange 5 prosciutto slices slightly overlapping on a chopping board. Lay 1 piece of pork lengthwise on the prosciutto. Spread half of the thyme mixture on the pork. Season with pepper. Wrap prosciutto around the pork and tie with kitchen string at 4cm intervals. Repeat with remaining prosciutto, pork, and thyme mixture. Transfer the pork bundles to a large greased roasting pan. Roast for 40 minutes.
  • Take the pork out of the oven. Turn up the oven heat to 200C/180C fan-forced. Place the pork on a plate. Arrange sweet potato and red onion slices, slightly overlapping, in the roasting pan. Mix melted butter and maple syrup in a bowl. Brush half of the maple mixture onto the vegetables in the pan.
  • Lay the pork over the vegetables and roast for 20 minutes. Brush the pork with the rest of the maple mixture and roast for another 20 minutes until just cooked. Loosely cover the pork with foil, let it sit for 10 minutes, then slice and serve with the roasted vegetables, steamed greens, and additional thyme sprigs.
