Prosciutto-wrapped roast pear with brie & blue cheese

A delightful summer starter featuring ripe pear, savory prosciutto, tangy cheese, and peppery arugula.
Ingredients:
  • 10 pears, halved lengthways
  • Olive oil spray
  • 60ml (1/4 cup) extra virgin olive oil
  • 40.00 ml balsamic vinegar
  • 10 slices prosciutto, halved lengthways
  • 2 bunches rocket leaves
  • 100g brie, cut into 10 slices
  • 100g blue cheese, cut into 10 slices
Instructions:
  • Preheat your oven to 180°C. Prepare a baking tray by lining it with non-stick baking paper.
  • - Core each pear half using a teaspoon or melon baller, then place them cut-side up on a prepared tray. - Generously spray with oil and season with salt and pepper. - Bake in the oven for 30-40 minutes or until tender. - Allow the pears to cool before serving.
  • In a jug, combine the oil and vinegar, then season with salt and pepper to taste.
  • Lay out half of the prosciutto on a flat surface. Layer half of the pear slices on top. Add 1 rocket leaf and 1 slice of brie on each pear slice. Wrap the prosciutto around the pear tightly to seal the ingredients. Transfer to a serving platter and repeat the process with the remaining prosciutto, pear, rocket, and brie. Drizzle with balsamic dressing before serving.
