Prosciutto-wrapped baby carrots with maple glaze

Elevate your roast with delicious prosciutto-wrapped baby carrots as the perfect side dish.
Ingredients:
  • 4 thin slices prosciutto, halved lengthways
  • 2 bunches baby (Dutch) carrots, trimmed, peeled
  • 25g butter, melted
  • 111.38 gm maple syrup
  • 23.40 gm wholegrain mustard
  • 2 tsp finely grated orange rind
  • Small fresh flat-leaf parsley leaves, to serve
Instructions:
  • 1. Preheat the oven to 180C/160C fan-forced and line 2 baking trays with baking paper. 2. Lay out 1 piece of prosciutto on a flat surface. 3. Arrange 3 carrots at one short end of the prosciutto. 4. Roll up the prosciutto to wrap the carrots. 5. Place the prosciutto-wrapped carrots on one of the prepared trays. 6. Repeat the process with the remaining prosciutto and carrots to create a total of 8 bundles.
  • In a small bowl, mix together butter, maple syrup, mustard, and orange rind. Season with salt and pepper. Brush carrot bundles with half of the maple mixture. Roast for 25 to 30 minutes, brushing twice more with the rest of the maple mixture, until golden and tender. Serve sprinkled with parsley.
