Prosciutto-wrapped melon with creamy baby bocconcini.
Ingredients:
  • 700g honeydew melon, peeled, seeded
  • 6 slices prosciutto, cut into thirds
  • 18 baby bocconcini
  • Extra virgin olive oil, to serve
  • Small fresh mint leaves, to serve
Instructions:
  • Slice the melon into eighteen 2.5cm pieces. Layer each slice with a piece of prosciutto and a bocconcino. Secure with toothpicks or cocktail forks, then drizzle with oil. Finish with a sprinkle of fresh mint and a dash of pepper.
