Indulge in a refreshing seafood salad with sweet melon accents.
Ingredients:
  • 750g cooked prawns, peeled, deveined, tails intact
  • 1/2 honeydew melon, peeled, seeded, chopped
  • 1/4 seedless watermelon, chopped
  • 200g feta, crumbled
  • 4 slices prosciutto, grilled, torn
  • 1 small red onion, halved, thinly sliced
  • 125.00 ml fresh mint leaves
  • 56.88 gm olive oil
  • 40.00 ml red wine vinegar
  • 5.90 gm dijon mustard
Instructions:
  • Toss all the salad ingredients together in a large bowl with care.
  • In a jug, combine the oil, vinegar, and mustard. Season to taste before whisking into a flavorful dressing.
  • Just before serving, delicately drizzle the dressing over the salad and gently toss to combine.
