Tropical marinated prawns paired with refreshing melon herb salad.
Ingredients:
  • 40.00 ml dark rum
  • 1 lime, rind finely grated, juiced
  • 57.20 gm honey
  • 1 long fresh red chilli, finely chopped
  • 20.00 ml chopped fresh coriander
  • 1 tsp finely grated fresh ginger
  • 1kg large green prawns, peeled, deveined
  • 36.40 gm olive oil
  • 1/2 (about 580g) honeydew melon, peeled, thinly sliced
  • 1 avocado, peeled, thinly sliced
  • 125.00 ml fresh mint leaves
  • 125.00 ml fresh coriander leaves
  • 3 spring onions (shallots), thinly sliced diagonally
  • 1 long fresh red chilli, thinly sliced diagonally
  • 21.00 gm lime juice
Instructions:
  • In a large bowl, mix together rum, lime zest and juice, honey, chili, coriander, and ginger. Add prawns and coat evenly. Cover and refrigerate for 30 minutes to let the flavors meld.
  • For the refreshing melon salad, beautifully present the melon, avocado, mint, coriander, spring onion, and chili on a platter. Next, combine the oil and lime juice in a bowl, season to perfection, and whisk until well blended.
  • Preheat a barbecue grill or chargrill on medium-high heat. Drain the prawns, then toss them with oil and seasonings until coated. Grill them, turning occasionally, for 2 minutes until they curl up and are fully cooked.
  • Arrange the prawns elegantly over the melon salad and generously drizzle on the dressing.
