Tropical banana bread with coconut rum batter and key lime glaze for a burst of island flavors in every bite.
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 0.25 cup sweet butter, softened
  • 2 large eggs
  • 1.5 cups mashed bananas
  • 0.25 cup plain yogurt
  • 3 tablespoons dark rum
  • 0.5 cup grated fresh coconut
  • 0.5 cup powdered sugar
  • 1.5 tablespoons Key lime juice
  • 1 tablespoon coconut flakes
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and butter a 9x5-inch loaf pan.
  • Combine the flour, baking soda, and salt in a bowl.
  • In a large bowl, use an electric mixer to blend sugar and butter until smooth. Add eggs one at a time, beating well after each. Mix in bananas, yogurt, and rum until blended. Gently fold in flour mixture until just moist. Stir in fresh coconut and pour into the loaf pan.
  • Bake in the preheated oven for 1 hour until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes.
  • Whisk powdered sugar, Key lime juice, and coconut flakes together to make a delightful glaze. Drizzle it over the warm bread.
  • Take the warm bread out of the pan and transfer it to a wire rack. Drizzle the glaze over it and let it cool fully before slicing, approximately 30 minutes.
