Vegan banana bread with coconut oil and pecan flour for a moist, hearty twist on the classic recipe.
Ingredients:
  • 2.5 cups pecan halves
  • 1.5 cups rolled oats
  • 6 large over-ripe bananas, mashed
  • 1 cup cane sugar
  • 1.75 cups white whole wheat flour
  • 1 tablespoon baking powder
  • 0.5 cup coconut oil, melted
  • 1 teaspoon sea salt
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while lining two 9x5-inch loaf pans with parchment paper.
  • Pulse pecan halves in a food processor until a flour forms and transfer to a bowl. Repeat with oats. Combine bananas and sugar in a separate bowl. Mix banana mixture with pecan and oat flours. Stir in white whole wheat flour, baking powder, coconut oil, and salt until a thick batter forms. Spoon batter into loaf pans and bake.
  • Bake until a toothpick inserted in the center of the loaf comes out clean, approximately 45 minutes in the preheated oven.
