Egg-free, dairy-free, and sugar-free muffins with a deliciously nutty texture from flax seeds and walnuts. Sweetened with ripe bananas, chocolate chips, and raisins for a burst of flavor.
Ingredients:
  • 1 cup wheat bran
  • 0.5 cup rolled oats
  • 0.25 cup flax seeds
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 0.25 teaspoon salt
  • 1 pinch ground ginger, or to taste
  • 1 pinch ground allspice, or to taste
  • 1 pinch ground nutmeg, or to taste
  • 10 ripe bananas, mashed
  • 0.25 cup peanut oil
  • 1 cup chopped walnuts
  • 1 cup dark chocolate chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), and prep 16 muffin cups with a light greasing or paper liners.
  • In a bowl, mix flour, bran, rolled oats, flax seeds, baking powder, baking soda, cinnamon, salt, ginger, allspice, and nutmeg. In a separate large bowl, combine bananas and peanut oil; stir in the dry ingredients. Fold in walnuts, chocolate chips, and raisins. Spoon batter into muffin cups, filling them about 2/3 full.
  • Bake muffins in the oven until golden brown and a knife inserted in the center comes out clean, approximately 30 minutes.
