Delicious vegan banana bread made with ripe bananas, applesauce, and vegan butter for a moist treat everyone can enjoy!
Ingredients:
  • cooking spray
  • 0.5 cup vegan butter, melted
  • 0.5 cup coconut sugar
  • 0.25 cup brown sugar
  • 2 cups mashed bananas
  • 0.5 cup plain applesauce
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x5-inch loaf pan with cooking spray.
  • In a large bowl, cream together butter, coconut sugar, and brown sugar with an electric mixer for 2 to 3 minutes until smooth and creamy. Mix in mashed bananas and applesauce until fully combined.
  • In a separate bowl, mix flour, baking soda, baking powder, and salt. Gently stir in the banana mixture until just moistened. Carefully fold in the walnuts, then transfer the batter into the prepared loaf pan.
  • Bake in the preheated oven for 60-65 minutes or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes and then transfer to a wire rack.
