Vegan banana bread with coconut oil, dates, and vanilla, topped with icing. Perfect with tea or coffee.
Ingredients:
  • 0.25 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 pinch salt
  • 5 dates, pitted and chopped
  • 2 very ripe bananas
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 0.25 cup Demerara sugar
  • 0.25 cup confectioners' sugar
  • 1 teaspoon cold water, or more as needed
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) to create the perfect baking environment. Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal later on.
  • Mix together the flour, baking powder, cinnamon, baking soda, and salt in a bowl, then gently stir in the chopped dates.
  • In a separate bowl, mix bananas, coconut oil, and vanilla extract. Mash in Demerara sugar with a fork. Stir in the flour mixture until just combined. If needed, add a few teaspoons of water for moisture. Transfer batter to the loaf pan.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden and a skewer inserted into the center comes out clean. Let cool for about 30 minutes before serving.
  • Combine confectioners' sugar with water until you achieve the perfect glaze consistency, then generously drizzle over the banana bread.
