Irresistible vegan banana bread with oil and flax egg, indistinguishable from the classic version!
Ingredients:
  • 2 tablespoons flaxseed meal
  • 1/2 cup plus 2 tablespoons almond milk
  • 2 to 3 very ripe bananas, peeled
  • 1/3 cup walnut, coconut or avocado oil
  • 3/4 cup sugar (1/2 cup if you would like it less sweet, 1 cup if more sweet)
  • 1 1/2 cups all-purpose flour
  • Pinch salt
Instructions:
  • Preheat your oven to 350°F. Line a 4x8-inch loaf pan with a parchment paper sling for easy removal.
  • Prepare the flax egg: Mix the flaxseed meal and almond milk in a small bowl. Allow it to thicken while you gather the remaining ingredients.
  • Prepare the batter: In a large mixing bowl, mash ripe bananas until smooth. Mix in oil, sugar, flax egg, and vanilla. Fold in flour, baking soda, and salt.
  • Transfer the batter into a greased loaf pan. Bake for 50 minutes to 1 hour, or until a toothpick inserted in the center comes out clean.
  • Let the freshly baked banana bread cool in the pan for a few minutes, then gently lift it out using the parchment paper as handles. Allow it to cool completely before slicing and serving. Enjoy!
