Vegan Banana-Nut-Carob Muffins

Delicious vegan banana muffins packed with walnuts and carob chips, perfect for a healthy breakfast!
Ingredients:
  • 3 cups all-purpose flour
  • 0.5 cup brown sugar, or more to taste
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 medium ripe bananas, mashed
  • 1 cup water
  • 0.5 cup soy milk
  • 0.5 cup oil
  • 2 teaspoons vanilla extract
  • 1 cup walnut pieces
  • 0.75 cup vegan carob chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare two 12-cup muffin tins by greasing them or lining the cups with paper liners.
  • In a large bowl, mix together flour, brown sugar, baking powder, baking soda, and salt, then create a well in the center.
  • Combine bananas, water, soy milk, oil, and vanilla extract in a bowl and mix until smooth. Pour the banana mixture into the dry ingredients, stir until just combined, then fold in walnut pieces and carob chips until fully mixed.
  • Scoop the muffin batter into the prepared cups using an ice cream scoop, filling them 2/3 full.
  • Bake in the preheated oven for about 20 minutes, until the tops spring back when lightly pressed. Let them cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
