Vegan Banana Bread

Perfectly balanced vegan banana nut bread recipe for an ideal sweet treat.
Ingredients:
  • 1 cup organic granulated sugar
  • 1 1/2 cups mashed ripe bananas (3 medium)
  • 1/2 cup refined coconut oil, melted
  • 1 teaspoon vanilla
  • 1/4 cup unsweetened vanilla almond milk or soymilk
  • 1 teaspoon apple cider vinegar
  • 2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts, if desired
Instructions:
  • Preheat your oven to 350°F and generously grease the bottom of a 9 x 5 x 3-inch loaf pan.
  • In a large bowl, combine sugar, bananas, coconut oil, and vanilla, beating until smooth. Mix in almond milk and vinegar. Fold in flour, baking soda, and salt until just moistened. Gently stir in walnuts before pouring the batter into the pan.
  • Bake for 1 to 1 hour 10 minutes until a toothpick inserted in the center comes out clean and the top of the loaf looks dry. Let cool for 10 minutes, then gently loosen the sides of the loaf from the pan and transfer to a cooling rack. Allow the bread to cool completely for about 1 hour before slicing. Wrap the cooled bread in plastic wrap and refrigerate for storage.
