Rainbow smoothie popsicles recipe

Create vegan-friendly popsicles using your favorite smoothie flavors for a refreshing summer treat. Easily double the recipe if you have extra molds.
Ingredients:
  • 375ml (1 1/2 cups) almond milk
  • 13.60 gm pure maple syrup
  • 1 banana, peeled, sliced
  • 20.00 gm rolled oats
  • 50g chopped fresh pineapple
  • 30g baby spinach
  • 125g fresh blueberries
  • 100g chopped mango
  • 125g fresh raspberries
Instructions:
  • Combine almond milk, maple syrup, banana, and oats in a blender and blend until smooth. Transfer three-quarters of the mixture to a jug and refrigerate covered.
  • Combine the pineapple and spinach in the blender with the leftover banana mixture. Blend until velvety smooth. Divide the mixture evenly among twelve 80ml (1/3 cup) popsicle molds. Freeze for 1 hour until firm.
  • Transfer a portion of the remaining banana mixture to the clean blender. Add the blueberries and blend until smooth. Divide the mixture among the popsicle moulds, insert a wooden popsicle stick into each one, and freeze for 1 hour to set.
  • Transfer half of the remaining banana mixture to the blender with the mango. Blend until smooth. Divide the mixture among the popsicle moulds and freeze for 1 hour to set.
  • Transfer the leftover banana mixture to the blender along with the raspberries. Blend until smooth. Divide the mixture among the popsicle molds and freeze for 4 hours to set.
