Deliciously moist vegan banana muffins made with coconut milk and ripe bananas, no dairy or eggs needed!
Ingredients:
  • 0.5 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon ground nutmeg
  • 2 cups mashed ripe bananas
  • 1 cup canola oil
  • 1 cup coconut milk
Instructions:
  • Prepare for baking by gathering all the ingredients. Preheat the oven to 350 degrees F (175 degrees C) and either grease 12 muffin cups or line them with paper liners.
  • Combine flour, white sugar, brown sugar, cinnamon, baking powder, baking soda, nutmeg, and salt in a large bowl, creating a flavorful dry mixture.
  • Combine bananas, canola oil, and coconut milk in a separate bowl, then gently fold the banana mixture into the flour mixture until just combined.
  • Fill each muffin cup with batter, allowing it to reach about 3/4 full.
  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
