Indulge in scrumptious gluten-free vegan banana muffins made with applesauce, ripe banana, brown sugar, and olive oil.
Ingredients:
  • 1 cup gluten-free all-purpose flour mix (such as Bob's Red Mill®)
  • 0.5 cup light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 2.5 ripe bananas, mashed
  • 0.25 cup applesauce
  • 0.25 cup extra-virgin olive oil
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while preparing a muffin tin by greasing it or lining the cups with paper liners.
  • In a large bowl, mix together gluten-free flour, sugar, baking powder, cinnamon, and salt.
  • Combine ripe bananas, applesauce, high-quality olive oil, and fragrant vanilla extract in a separate bowl. Blend the banana mixture into the flour mixture until the batter is smooth and creamy.
  • Carefully scoop the batter into the muffin cups, ensuring they are filled up to 2/3 of the way.
  • Bake until the tops spring back when lightly pressed, for around 40 minutes in the preheated oven.
