Gluten-Free Vegan Dark Chocolate Brownies

Indulgent vegan brownies made with banana puree, sweetened with maple syrup and free of dairy, eggs, and gluten.
Ingredients:
  • 2 cups gluten-free all-purpose flour
  • 1.5 cups maple syrup
  • 0.75 cup dark cocoa powder
  • 0.75 teaspoon gluten-free baking powder
  • 1 teaspoon salt
  • 1 cup mashed bananas
  • 0.25 cup unsweetened coconut milk
  • 0.25 cup olive oil
  • 1 cup vegan dark chocolate chips
  • 0.5 cup cocoa nibs
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • In a large bowl, mix flour, maple syrup, cocoa powder, baking powder, and salt until well combined. Create a well in the center. In another bowl, combine mashed bananas, coconut milk, olive oil, and vanilla extract. Pour the banana mixture into the flour mixture and stir until evenly mixed. Gently fold in the chocolate chips. Transfer the batter to the baking dish and sprinkle with cocoa nibs.
  • Bake in the preheated oven for about 30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before slicing.
