Sauteed Tuscan cabbage

Dark and crinkly cabbage shines in Italian dishes like sides, soups, and pastas.
Ingredients:
  • 36.40 gm olive oil
  • 2 brown onions, halved, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 2 tsp fennel seeds
  • 2 bunches Tuscan cabbage, coarsely shredded
  • 250ml (1 cup) water
  • 40.00 ml white balsamic vinegar
Instructions:
  • In a large frying pan over medium heat, warm the oil and add the onion, garlic, and fennel seeds. Sauté, stirring frequently, for 4 minutes until the onion is soft but not browned.
  • Mix in the cabbage followed by half of the water. Simmer covered for 5 minutes, stirring once. Pour in the rest of the water. Continue to cook covered, stirring once, until the cabbage is tender, about 5 minutes more.
  • Season the cabbage mixture with a pinch of salt and pepper, then stir in the vinegar before serving.
