Sauteed brussels sprouts with speck & lentils

Indulge in flavorful Brussels sprouts with gourmet lentils and savory bacon.
Ingredients:
  • 300g brussels sprouts, trimmed, halved
  • 200g-piece speck, rind removed, cut into 1cm pieces
  • 1 leek, halved, thinly sliced
  • 150g (2/3 cup) French green lentils, cooked
  • 20.00 ml Red Wine Vinegar
Instructions:
  • Boil the brussels sprouts in a pot of salted water for 4-5 minutes until they are tender crisp. Then, cool them in cold water and drain.
  • 1. Heat oil in a large frying pan until shimmering. Cook speck, stirring occasionally, for 6 minutes or until golden. Add brussels sprouts and sauté for 2 more minutes until golden. Remove using a slotted spoon and transfer to a bowl.
  • Cook leek and garlic in the pan until soft, about 4 minutes. Add speck mixture and lentils, stirring until heated through, about 1-2 minutes. Pour in vinegar and cook until evaporated, about 1 minute. Season to taste.
