Brussels Sprouts with Apples and Thyme

"Sautéed Brussels sprouts with Granny Smith apples, bacon, and thyme - a delicious and elegant holiday side dish."
Ingredients:
  • 1 pound bacon, cut into 1/2-inch pieces
  • 2 medium Granny Smith Apple-Raw+Peel (Australian)
  • 2 pounds Brussels sprouts, trimmed and thinly sliced
  • 2 teaspoons chopped fresh thyme
Instructions:
  • In a large skillet or Dutch oven over medium-high heat, cook the bacon until evenly browned, about 10 minutes, turning occasionally. Transfer the cooked bacon to paper towels to drain, and save the bacon fat for another use.
  • Wrap the grated apples in a clean kitchen towel and give them a good squeeze to remove excess moisture.
  • In a skillet or Dutch oven, heat 2 tablespoons of the bacon fat over medium to medium-high heat. Cook Brussels sprouts until crisp-tender, about 5 minutes, adding more bacon fat as needed. Season with salt and pepper. Add grated apple, cooked bacon, and thyme; cook until warmed through, about 2 minutes. Transfer to a platter and serve right away.
