Maple roasted Brussels sprouts with apples, cranberries, and walnuts.
Ingredients:
  • 1 pound Brussels sprouts
  • 1 large Granny Smith apple - peeled, cored, and diced
  • 0.25 cup olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon balsamic vinegar
  • 0.25 cup dried cranberries, or more to taste
  • 0.25 cup roasted salted walnuts
Instructions:
  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix together Brussels sprouts and apple. In a small bowl, whisk olive oil, maple syrup, and balsamic vinegar, then pour over the Brussels sprouts and apple. Toss until everything is well coated, then spread out evenly on a baking sheet. Season with salt and pepper.
  • Roast Brussels sprouts in a preheated oven until tender and browned, about 10-15 minutes, flipping halfway through. Toss with cranberries and walnuts.
