Roasted brussels sprouts with crispy bacon and a rich butter sauce - a must-have side for any Irish celebration.
Ingredients:
  • 300g brussels sprouts, trimmed, halved
  • 160g bacon rashers, rind removed, coarsely chopped
  • 30g butter
Instructions:
  • Steam the brussels sprouts over boiling water in a steamer basket for 5 minutes, or until they are tender.
  • Cook bacon in a large non-stick frying pan over medium-high heat until golden, about 4-5 minutes.
  • Combine the brussels sprouts and butter with the bacon, then toss everything together. Season with salt and pepper to taste.
