Sauteed cherries with mascarpone

Ingredients:
  • 50g (2 1/2 tbsp) butter
  • 55g (1/4 cup) caster sugar
  • lkg cherries, stems removed
  • 60mls (1/4 cup) cherry brandy
  • 250g mascarpone cheese, to serve
Instructions:
  • 1. Preheat a large heavy-based frying pan over medium-high heat. Melt the butter until frothy, then add the caster sugar and stir until dissolved, about 1-2 minutes. Finally, add the cherries and cook while stirring occasionally, until heated through, for about 2-3 minutes.
  • Drizzle the cherry brandy over the cherries, light it up with a match, and cook for an additional minute until the flames subside. Serve right away with a side of mascarpone cheese.
