Indulge in this decadent gluten-free and vegan chocolate cake inspired by the Depression era - perfect for dark chocolate enthusiasts!
Ingredients:
  • 1.5 cups rice flour
  • 2 cups dark brown sugar
  • 1 tablespoon baking soda
  • 0.66666668653488 cup unsweetened cocoa powder
  • 0.66666668653488 cup olive oil
  • 1 (15 ounce) can garbanzo beans, with liquid
  • 1.75 cups water
  • 2 tablespoons white vinegar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously grease a 9x12-inch baking pan with cooking spray and dust it with rice flour.
  • In a food processor, blend rice flour, brown sugar, salt, baking soda, and cocoa powder until thoroughly combined. Add olive oil and pulse until mixed. Pour in garbanzo beans with liquid and puree until smooth. Gradually incorporate water, then add vinegar; the batter will be thin. Transfer batter to the baking pan.
  • Bake until edges detach from the pan in the preheated oven for 45 to 50 minutes. Let cool for 1 hour before serving to avoid it being crumbly.
