Elevate dinner with homemade potato rosti topped with savory smoked salmon.
Ingredients:
  • 10 medium desiree potatoes
  • 50g butter, melted
  • 77.55 gm Brand lite sour cream
  • 2 tsp horseradish cream
  • 50g baby spinach leaves
  • 18.20 gm extra virgin olive oil
  • 200g sliced smoked salmon
  • Lemon wedges, to serve
Instructions:
  • Place whole potatoes in a steamer or microwave for 4-5 minutes until partially cooked. Once cooled, peel and grate them. Combine them in a bowl with butter, season generously, and mix well.
  • Warm a non-stick frying pan over medium heat. Separate the potato mixture into 8 equal portions and form them into patties. Cook each side for 5-7 minutes, or until they are crispy and golden brown. Place on a paper towel to drain.
  • Combine sour cream with zesty horseradish cream. Drizzle baby spinach with oil. Place two rosti on each plate, then add smoked salmon and spinach on top. Serve with a dollop of the sour cream mixture and lemon wedges.
