Impress guests with exquisite smoked salmon, zesty horseradish cream and crispy potato rosti.
Ingredients:
  • 4 (about 800g) desiree potatoes, peeled
  • 1 brown onion, coarsely grated
  • 40.00 ml plain flour
  • 40g butter
  • 125g sour cream
  • 23.40 gm grated horseradish
  • 8 smoked salmon slices
  • Dill sprigs, to serve
  • Capers, to serve
  • Baby rocket leaves, to serve
Instructions:
  • Grate the potatoes using a coarse grater and place them in a large bowl. Mix in the onion. Squeeze the potato mixture in a sieve to remove excess liquid. Transfer to a clean bowl, add flour, and stir well. Season with salt and pepper.
  • In a frying pan over medium heat, melt half of the butter and add half of the oil. Divide the potato mixture into four portions. Place 2 portions in the pan and press into 12cm rounds with a spatula. Cook until golden brown, about 3-4 minutes. Flip and cook for 2-3 minutes until cooked through and golden brown. Transfer to a paper towel-lined plate. Repeat with remaining butter, oil, and potato mixture.
  • Combine the sour cream and horseradish in a small bowl.
  • Plate the rosti, layer with smoked salmon, dollop with sour cream mixture, sprinkle with dill and capers, and serve with baby rocket leaves, if preferred.
