Enhanced Banana Bread with Coconut and Cinnamon for a flavorful twist.
Ingredients:
  • 0.33333334326744 cup packed brown sugar
  • 0.25 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup mashed ripe banana
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup semisweet chocolate chips
  • 0.5 cup unsweetened flaked coconut
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Begin by preheating your oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour a 9x5-inch loaf pan.
  • In a large bowl, blend white sugar, brown sugar, and butter until smooth. Add eggs one at a time, then mix in banana, sour cream, and vanilla.
  • Combine flour, baking powder, baking soda, and salt in a separate bowl, then gently fold into the wet mixture until just combined.
  • Combine chocolate chips, coconut, and cinnamon in a small bowl. Gently mix 2/3 of the mixture into the batter before transferring the batter to the pan. Sprinkle the remaining chocolate chip mixture on top.
  • Bake the loaf for 60-65 minutes until a toothpick comes out clean when inserted into the center. Allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
