Quick and easy snack perfect for meal prepping on the go - ready in just 10 minutes!
Ingredients:
  • 375.00 gm white self-raising flour
  • 127.50 gm desiccated coconut
  • 2.50 gm cinnamon
  • 312.50 ml So Good™ Almond Milk Unsweetened
  • 113.75 gm olive oil
  • 117.98 gm honey
  • 4.40 gm flaked coconut
Instructions:
  • Mix together the flour, coconut, and cinnamon in a bowl.
  • In a large bowl, combine almond milk, oil, honey and eggs, whisk until smooth.
  • Pour the liquid ingredients into the flour mixture slowly while stirring.
  • Pour the mixture into a greased loaf pan measuring 14cm x 25cm, then generously sprinkle with flaked coconut.
  • Bake at 180°C for 50-55 minutes or until a skewer comes out clean.
