Delicious whole wheat banana bread with dates, walnuts, and coconut. Moistened with sour cream, sweetened with brown sugar and cinnamon. Recipe yields 4 loaves, perfect for a satisfying breakfast or snack.
Ingredients:
  • 2 teaspoons ground cinnamon
  • 2 cups whole wheat flour
  • 1.5 cups quick cooking oats
  • 1 tablespoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 2 cups dark brown sugar, packed
  • 0.75 cup butter
  • 1 (16 ounce) container sour cream
  • 6 very ripe bananas, mashed
  • 2.5 teaspoons vanilla extract
  • 2 cups chopped dates
  • 1 cup chopped walnuts
  • 0.5 cup toasted flake coconut
  • 0.25 cup dark brown sugar, divided
  • 2 tablespoons chopped dates, divided
  • 2 tablespoons chopped walnuts, divided
  • 2 tablespoons toasted flake coconut, divided
Instructions:
  • Preheat your oven to 300°F (150°C) and grease 4 loaf pans that are 7x3 inches. Mix 1 tablespoon of white sugar with 2 teaspoons of cinnamon in a small bowl, then sprinkle the cinnamon sugar mixture inside the greased loaf pans.
  • In a bowl, combine whole wheat flour, oats, all-purpose flour, baking soda, 1 1/2 teaspoon cinnamon, and salt. In a separate mixing bowl, cream together 2 cups brown sugar and 3/4 cup butter until smooth. Mix in sour cream, bananas, eggs, and vanilla extract until well combined. Gently fold the dry ingredients into the banana mixture and then fold in dates, walnuts, and toasted coconut.
  • Pour the batter into the loaf pans. Top each loaf with a generous sprinkle of dark brown sugar, dates, walnuts, and coconut. Finish with a glossy butter glaze on top.
  • Bake the loaves in the oven until golden brown and a toothpick inserted into the center comes out clean, approximately 1 hour.
