Broccoli and blue cheese gratin

Broccoli: Versatile powerhouse of nutrients - steam, stir-fry, or puree into soup. Enjoy in this cheesy side dish.
Ingredients:
  • 600g broccoli, broken into florets, stems cut into 1cm-thick matchsticks
  • 40g butter
  • 40.00 ml plain flour
  • 375ml (1 1/2 cups) reduced-fat milk
  • Pinch of ground nutmeg
  • White pepper
  • 50g blue cheese, crumbled
Instructions:
  • Preheat the oven to 200°C. Boil a medium saucepan of water and blanch the broccoli for 2 minutes. Drain and transfer to a 1.5L (6-cup) baking dish. Wipe the saucepan dry.
  • In a pan over medium heat, melt the butter. Add the flour and cook for about 30 seconds until it starts to bubble. Take off the heat. Slowly pour in the milk while whisking until smooth. Put back on heat and cook for 3-4 minutes until the sauce thickens and boils. Stir in nutmeg, season with salt and white pepper.
  • Drizzle the sauce over the broccoli, sprinkle with blue cheese, and bake in the oven until the cheese is melted, about 10 minutes.
