Broccoli and blue cheese fritters with walnut dressing

Elevate fritters with gourmet walnut dressing for a delicious twist.
Ingredients:
  • 200g broccoli, trimmed, finely chopped
  • 150g (1 cup) plain flour
  • 185ml (3/4 cup) milk
  • 1 egg
  • 11.80 gm wholegrain mustard
  • 80g blue cheese (King Island Roaring Forties brand), crumbled
  • 1/2 red onion, finely chopped
  • 2 egg whites
  • Pinch of salt
  • 185ml (3/4 cup) vegetable oil
  • 80g baby spinach leaves
  • 35g (1/3 cup) walnut halves
  • 60ml (1/4 cup) olive oil
  • 30.00 ml red-wine vinegar
  • Pinch of caster sugar
Instructions:
  • In a heated non-stick pan, toast walnuts for 2 minutes until fragrant. Finely chop and transfer to a small bowl. Mix in oil and vinegar, then season with salt and sugar to taste. Set aside for later use.
  • Place the broccoli in a large heatproof bowl and pour boiling water over it. Let it sit for 2 minutes until bright green and tender. Drain and then refresh under cold water.
  • Sift the flour into a large bowl and make a well in the center. In a separate jug, combine the milk, egg, and mustard, then pour this mixture into the flour. Use a wooden spoon to stir until just combined, then fold in the broccoli, blue cheese, and onion.
  • Beat egg whites using an electric beater until soft peaks form in a clean, dry bowl. Gently fold into the flour mixture until just combined. Season with salt to taste.
  • In a large non-stick frying pan over medium heat, heat 60ml (1/4 cup) of oil. Pour 60ml (1/4 cup) of batter into the pan to make one fritter. Cook until golden for about 2 minutes. Flip and cook for another minute until golden. Transfer to a plate lined with paper towel. Repeat with remaining batter, adding and reheating oil between batches.
  • Arrange the spinach leaves on serving plates, place the fritters on top, and generously drizzle with walnut dressing. Serve immediately to enjoy the delicious flavors.
