Cozy Broccoli Pasta Bake with bacon, leek, and a creamy blend of blue cheese and parmesan - a family favorite for winter nights.
Ingredients:
  • 300g macaroni
  • 60g butter
  • 100g short-cut bacon, from the deli, finely chopped
  • 1 small leek, thinly sliced
  • 20.00 ml chopped thyme
  • 62.50 ml plain flour
  • 386.25 gm milk
  • 150g blue cheese, coarsely chopped
  • 375g broccoli, trimmed, cut into small florets
  • 125.00 ml coarsely grated parmesan
  • 125.00 ml panko breadcrumbs
  • Olive oil spray
Instructions:
  • Preheat the oven to 200C (180C for fan-forced ovens).
  • Boil the macaroni in a generously salted large saucepan until it's al dente. Save 1½ cups of the cooking liquid before draining.
  • In a large saucepan over high heat, melt the butter until sizzling. Sauté bacon, leek, and thyme for 4 minutes until the leek is tender. Stir in the flour and cook for 2 minutes until well combined.
  • Whisk in reserved cooking liquid and milk into the leek mixture until smooth. Stir constantly for 4 minutes until the sauce comes to a boil and thickens. Add blue cheese, season, and fold in broccoli and pasta.
  • Transfer the mixture into a 2L ovenproof dish. Sprinkle with parmesan and breadcrumbs, then give it a quick spray of oil. Bake on the top shelf of the oven for about 25 minutes, or until it turns a beautiful golden color and starts bubbling. Enjoy!
