Broccoli pasta casserole: creamy sauce, quick & easy for busy nights.
Ingredients:
  • 1 (12 ounce) package farfalle (bow tie) pasta
  • 7 slices bacon
  • 1 onion, diced
  • 1 cup heavy cream
  • 3 tablespoons butter, divided
  • 1 cup shredded Gouda cheese
  • salt and ground black pepper to taste
  • 0.5 cup panko bread crumbs
  • 0.5 cup riced broccoli
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a casserole dish.
  • Bring a pot of salted water to a lively boil, then cook bow-tie pasta until perfectly al dente, stirring occasionally, approximately 12 minutes.
  • In a large skillet over medium-high heat, cook the bacon until evenly browned, about 10 minutes, turning occasionally. Drain the bacon on paper towels, leaving the bacon grease in the skillet. Let the bacon cool for about 5 minutes, crumble it, and set it aside. Drain and set aside the cooked pasta.
  • In a medium saucepan over medium heat, warm up 2 tablespoons of bacon grease. Cook onion and garlic in the sizzling grease for 2 to 3 minutes. Stir in crumbled bacon, heavy cream, and 1 tablespoon of butter; simmer until the sauce thickens and turns creamy, about 5 to 7 minutes. Melt in the gouda cheese and season with salt and pepper. Take it off the heat and fold in the cooked pasta. Transfer the whole mixture into a casserole dish.
  • In a microwave-safe bowl, heat the remaining 2 tablespoons of butter for 20 seconds until melted. Add panko bread crumbs and riced broccoli, stirring thoroughly to coat in butter. Spread the mixture on top of the pasta.
  • After 15 minutes in the preheated oven, carefully take it out.
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • Bake in the preheated oven until the crumble is golden brown, around 5 more minutes.
