Irresistible creamy baked pasta with bacon and French onion flavors.
Ingredients:
  • 375g Cucina Matese Penne Rigate Italian Pasta
  • 25g butter
  • 18.20 gm extra virgin olive oil
  • 2 large brown onions, thinly sliced
  • 200g shortcut bacon rashers, roughly chopped
  • 2 garlic cloves, crushed
  • 3 sprigs fresh thyme, plus extra leaves to serve
  • 40g sachet French onion soup mix
  • 125.00 gm dry white wine
  • 300ml pure cream
  • 375.00 ml grated Colby cheese
Instructions:
  • Preheat the oven to 200°C (180°C fan-forced).
  • Boil pasta in a big pot of salted water until slightly undercooked. Drain thoroughly and return to the pot.
  • In a large frying pan over medium heat, warm up butter and oil. Sauté onion for 10 minutes until softened, then stir in bacon and cook for an additional 5 minutes until browned. Finally, add garlic and thyme, and cook for 30 seconds.
  • Combine the soup mix with the onions, stirring to coat. Pour in the wine and simmer until reduced by half. Slowly mix in the cream, season with pepper, and add the mixture to the pasta, tossing to coat evenly. Transfer everything into a 6cm-deep, 17cm x 28cm baking dish. Sprinkle the top with cheese and bake for 20 to 25 minutes until the cheese is golden and bubbly.
  • Garnish with additional fresh thyme leaves before serving.
