Creamy French onion pasta combines sweet caramelized onions with tender orecchiette, creamy sauce, parmesan, and mushrooms for a cozy and flavorful meal. Add broccoli or cauliflower for extra veggies. Perfect for a comforting night in or pleasing a crowd.
Ingredients:
  • 400g dried orecchiette pasta
  • 60g salted butter, melted
  • 20.00 ml chopped fresh continental parsley leaves
  • 3 garlic cloves, crushed
  • 400g Swiss brown mushrooms, thickly sliced
  • 250mL (1 cup) Organic Beef Liquid Stock
  • 125mL (½ cup) light thickened cooking cream
  • 1 small baguette, cut into 8 slices
  • 200g tub French onion dip
  • 40g (½ cup) grated parmesan
  • Fresh thyme sprigs, to serve (optional)
Instructions:
  • Boil the pasta in salted water until al dente. Save 250mL (1 cup) pasta water before draining the pasta.
  • Combine butter, parsley, and 1 garlic clove in a small bowl. Heat oil in a large frying pan over medium heat, then stir in onion, mushroom, and remaining garlic. Cook for 5 minutes until tender.
  • Pour in the stock, cream, and pasta into the pot. Bring to a boil. Lower the heat to medium-low and let it simmer for 3 minutes until the sauce thickens and the pasta is cooked. If the sauce is too thick, add some reserved pasta water. Remove the pot from heat. Toast the bread and brush one side of each slice with the butter mixture while it's warm. Stir in the dip and cheese into the pasta. Season to taste. Serve the dish in individual bowls, garnish with thyme if desired, and enjoy with garlic toast.
