Protein-packed baked oatmeal is a deliciously portable breakfast option with the goodness of eggs and nonfat dry milk.
Ingredients:
  • 4 cups oats
  • 1.5 cups nonfat dry milk powder
  • 0.75 cup brown sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons salt
  • 1 teaspoon baking powder
  • 0.5 cup oil
  • 2 teaspoons vanilla extract
  • 1 cup dried cranberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C, then line a 9x13-inch baking dish with parchment paper.
  • Combine oats, milk powder, brown sugar, baking soda, cinnamon, salt, and baking powder in a bowl. In a separate bowl, whisk together milk, eggs, oil, and vanilla extract. Gently stir the wet ingredients into the dry ingredients until just combined. Fold in cranberries and transfer the mixture into a prepared baking dish.
  • Cook the oatmeal in the preheated oven for approximately 40 minutes or until set.
