Dark and stormy banana bread with a gingery twist and optional lime glaze for extra sparkle.
Ingredients:
  • For the bread
  • Cooking spray
  • 2 cups (260g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon fine sea salt
  • 1 cup (170g) lightly packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 tablespoons dark spiced rum
  • 2 teaspoons vanilla extract
  • 1 teaspoon finely grated fresh ginger
  • 2 medium very ripe bananas, mashed
  • 1/3 cup finely diced candied ginger, optional
  • For the optional glaze
  • 1 cup (114g) powdered sugar
  • 1 to 2 tablespoons fresh lime juice
  • 1 teaspoon finely grated lime zest
  • 1 to 2 tablespoons chopped candied ginger, optional
Instructions:
  • Preheat your oven to 350°F, positioning the rack in the upper third. Lightly grease a 9x5-inch pan and line it with parchment paper, leaving a few inches hanging over two sides. Lightly grease the parchment paper for easy bread removal.
  • Whisk together flour, baking soda, cinnamon, ginger, nutmeg, and salt in a medium bowl until well combined. Keep aside.
  • In a large bowl, whisk together brown sugar and melted butter until sugar begins to dissolve. Add eggs one at a time, whisking until mixture is smooth. Stir in rum, vanilla extract, fresh ginger, and mashed bananas.
  • Mix the dry ingredients into the wet ingredients using a rubber spatula until you get a thick but pourable batter. If desired, stir in the candied ginger. Pour the batter into the prepared pan and smooth the top.
  • Baking: Bake the bread for 45 to 55 minutes until the center passes the toothpick test. Let the bread cool in the pan for 15 minutes before transferring to a cooling rack.
  • Prepare the glaze (optional): Combine powdered sugar, 1 tablespoon lime juice, and lime zest in a small bowl. Adjust the consistency by adding more lime juice if desired. Pour over the warm or room temperature bread. Sprinkle with chopped candied ginger on top if using. Serve warm or at room temperature.
