Succulent beef roast wrapped in salty prosciutto with a side of sweet potatoes - a mouthwatering delight.
Ingredients:
  • 6 slices prosciutto
  • 1.3kg beef silverside (Heart Smart) Virginia roast
  • 10 fresh thyme sprigs
  • 2 orange sweet potatoes, peeled, in 1cm thick slices
  • 4 coliban potatoes, in 1cm thick slices
  • 36.40 gm olive oil
  • Salt & freshly ground pepper
Instructions:
  • Preheat the oven to 180°C. Lay 6 slices of prosciutto over a 1.3kg beef silverside Virginia roast, slightly overlapping, and tie it securely with kitchen string.
  • Arrange 10 fresh thyme sprigs under slices of prosciutto. Combine with 2 peeled orange sweet potatoes and 4 peeled coliban potatoes, each sliced 1cm thick, in a roasting pan.
  • Drizzle 2 tablespoons of olive oil over the meat and season generously with salt and freshly ground pepper. Roast for 40-45 minutes for a perfectly medium finish. Let the meat rest for 5 minutes, then slice and serve with the potatoes.
