Succulent lamb roast wrapped in savory prosciutto for an irresistible meal.
Ingredients:
  • 2 (x 350g) roast lamb rounds
  • 40.00 gm basil pesto
  • 6 slices prosciutto, halved crossways
  • 260g potato
  • 2 small zucchini, thickly sliced
  • 1 large red capsicum, thickly sliced
  • 1 large red onion, cut into wedges
  • 100g button mushrooms, halved
  • 40.00 ml fresh thyme leaves
Instructions:
  • Preheat oven to 220°C/200°C fan-forced. Line a roasting pan with baking paper. Place all vegetables, oil, thyme, and garlic in a large zip-lock bag. Seal and shake to coat them evenly.
  • Place the vegetables in the pan, season with salt and pepper, and roast for 10 minutes.
  • Place the lamb in the prepared pan. Spread each roast evenly with a delicious tablespoon of pesto, then generously season with pepper. Layer the prosciutto over the lamb, slightly overlapping for a beautiful presentation.
  • Roast the lamb for 30 minutes for medium or until it reaches your desired doneness. Let it stand, covered, for 5 minutes. Thinly slice the lamb and divide it between plates. Serve with roasted vegetables.
