Tomato, basil and prosciutto omelette

Ham, tomatoes, and basil transform this omelette with bold, smoky flavors.
Ingredients:
  • 4 slices quality prosciutto
  • 4 large free-range eggs
  • 1 handful different coloured small tomatoes halved and quartered
  • 1 small handful fresh basil leaves
  • 1 fresh red chilli deseeded and finely chopped, optional
  • olive oil for drizzling, optional
Instructions:
  • Preheat the grill to high. In a small non-stick frying pan over medium heat, dry fry the prosciutto until crispy. Transfer to a plate and keep warm. Whisk the eggs in a small bowl, season with sea salt and pepper. Pour the eggs into the hot pan, cook slightly, then scatter tomatoes on top. Remove the pan from heat and place it under the grill about 6-7cm away. Cook until eggs are just set and tomatoes are warmed through. Top with prosciutto, basil, and chili (optional). Season with black pepper and drizzle with olive oil before serving.
