Elevate sweet potatoes with hasselback slicing, infusing them with bacon, butter, maple syrup, and fresh thyme for a flavorful fall dish.
Ingredients:
  • 4 medium sweet potatoes (orange-fleshed), about 2 lb total
  • 2 tablespoons butter, melted
  • 1/4 teaspoon salt
  • 2 tablespoons real maple syrup
  • 1/3 cup cooked crumbled bacon
  • 1 teaspoon chopped fresh thyme leaves
Instructions:
  • Preheat oven to 400°F and generously coat a 13x9-inch baking dish with cooking spray.
  • Pierce sweet potatoes with fork, place on microwave-safe plate, and microwave uncovered on High for 5 minutes. Let cool for 5 minutes before serving.
  • Slice sweet potatoes into thin 1/8-inch rounds, keeping the bottom intact. Arrange them in a baking dish. Brush with 1 tablespoon of melted butter and sprinkle with salt.
  • - Bake for 50 to 65 minutes until fork-tender. - Brush with the remaining tablespoon of melted butter, then drizzle with maple syrup. - Finish by topping with crispy bacon and fresh thyme leaves.
