Elevate weeknight meals with flavorful Instant Pot mashed sweet potatoes, customizable with brown sugar and butter. Perfect for any occasion.
Ingredients:
  • 1 cup cold water
  • 1 3/4 teaspoon kosher salt, divided
  • 1 1/2 teaspoons lemon juice (about 1/4 lemon)
  • 4 pounds orange-fleshed sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons unsalted butter
  • 3 tablespoon brown sugar
Instructions:
  • Pour the cold water, 1 teaspoon of kosher salt, and lemon juice into the Instant Pot's inner pot.
  • Place the metal trivet or metal steamer basket in the bottom of the pot with the handles unfolded and set against the sides. Top with cubed sweet potatoes.
  • Pressure cook: Seal the Instant Pot with the lid and ensure the valve is closed. Cook on high pressure for 4 minutes, allowing 10 minutes for the Instant Pot to reach full pressure.
  • Perform a quick release: After cooking, promptly release pressure. Wait up to 1 minute for pressure to release, then uncover. Test doneness by gently poking 2 top and 2 center potatoes. They should be soft, bright orange, and easy to mash with a fork. If needed, pressure cook for another minute before rechecking.
  • After the sweet potatoes are cooked, carefully remove the inner pot wearing oven mitts. Take out the trivet and drain the sweet potatoes, then discard the water.
  • Mash the sweet potatoes: Put the drained potatoes back in the Instant Pot and add unsalted butter, 3/4 teaspoon kosher salt (adjust to taste), and brown sugar. Mash until smooth using a potato masher. Serve warm. You can make these mashed sweet potatoes 2 days ahead. Simply cool, store in an airtight container, and reheat on the stovetop or in the microwave before serving.
