Instant Pot Leek Mashed Potatoes

Creamy mashed potatoes enhanced with delightful leeks.
Ingredients:
  • 1 pound potatoes, peeled and cut into 1-inch cubes
  • 1 leek, white parts only, quartered lengthwise and finely sliced
  • 0.5 teaspoon coarse salt
  • water to cover
  • 0.33333334326744 cup milk, warmed
  • salt to taste
Instructions:
  • In a multi-functional pressure cooker, mix together potatoes, leek, and salt. Add enough water to cover the ingredients, approximately 2 cups. Seal the lid tightly and set the cooker to high pressure for 10 minutes following the manufacturer's guidelines. Give it 10 minutes to build up pressure.
  • Once pressure naturally releases for about 10 minutes, follow the manufacturer's instructions. Then, carefully quick-release any remaining pressure for about 5 minutes. Unlock and remove the lid, then drain the potatoes well before returning them to the pot.
  • Turn on the Saute function and cook the potatoes until they are dry and beginning to sizzle, which should take about 3 minutes. Then, add the butter and stir until it melts. Pour in the milk. Use a wooden spoon to mash the potatoes for a rustic texture, or run them through a ricer for a smoother consistency. Taste the mashed potatoes and season with salt as needed.
