Instant Pot mashed potatoes made with rich homemade chicken stock and fresh garlic, no need for milk, cream, or salt.
Ingredients:
  • 3 large Yukon Gold potatoes, sliced into 1/4-inch rounds
  • 2 cups chicken stock, or more to taste
  • 2 tablespoons salted butter, softened, or more to taste
  • 1 clove garlic, minced, or more to taste
  • 3 tablespoons cream cheese, softened
Instructions:
  • Place the potatoes in a steamer basket inside an electric pressure cooker and pour in the chicken stock. Close the lid, select high pressure, and set the timer for 9 minutes. Let the pressure build for 10 to 15 minutes.
  • Carefully use the quick-release method as per manufacturer's instructions for about 5 minutes. Unlock and lift the lid off.
  • Gently lift the sliced potatoes from the steamer basket, allowing them to drain while keeping the remaining stock for later use.
  • In the empty pressure cooker, combine butter and garlic, then use the Saute function to cook and stir for 90 seconds. Add the potatoes back to the pot and mash them with cream cheese.
