Ultimate Instant Pot beef stew with tender meat, potatoes, mushrooms, and carrots - perfect for an easy weeknight dinner.
Ingredients:
  • 1 tablespoon butter
  • 1 pound beef chuck, cut into 1-inch cubes
  • 4 Yukon Gold potatoes, cubed
  • 1.5 cups mushrooms, halved
  • 1 onion, cut into 6 wedges
  • 2 carrots, cut into 1/2-inch thick slices
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon dried rosemary
Instructions:
  • Prepare all ingredients.
  • Preheat a multi-functional pressure cooker (such as Instant Pot) on the Sauté setting. Melt butter in the pot and brown beef chuck cubes in batches for approximately 5 minutes per batch, ensuring all sides are cooked evenly.
  • Add all the beef chuck cubes back into the pot along with potatoes, mushrooms, onion, carrots, and garlic. Pour in the beef broth, and mix in Worcestershire sauce, tomato paste, salt, pepper, and rosemary.
  • Secure the lid tightly. Choose the Meat/Stew function as per the manufacturer's guidance and set the timer for 35 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural-release, allowing the pressure to release for 10 to 40 minutes. Then, unlock and remove the lid.
