Quick and delicious Instant Pot garlic mashed potatoes with a creamy and buttery flavor - a must-try for any meal.
Ingredients:
  • 4 cups vegetable broth
  • 2 pounds russet potatoes, peeled and cubed
  • 4 cloves garlic
  • 3 teaspoons salt, divided
  • 0.25 cup milk
  • 0.25 cup finely grated Parmesan cheese
  • 0.25 teaspoon ground nutmeg
Instructions:
  • In a multi-functional pressure cooker like an Instant Pot, mix together vegetable broth, potatoes, garlic, and 2 teaspoons of salt. Seal the lid securely and choose the Steam function as per the manufacturer's guidelines. Set the timer for 15 minutes and wait for the pressure to build for 10 to 15 minutes.
  • Vent the pressure using the quick-release method following the manufacturer's instructions, for approximately 5 minutes. Then, unlock and lift off the lid.
  • After straining the potatoes, return them to the pot and mash until smooth. Incorporate butter, milk, and Parmesan cheese. Season with the remaining salt and nutmeg to taste.
