Creamy Cheddar scalloped potatoes made quickly in the Instant Pot - perfect side dish for any meal.
Ingredients:
  • 2 pounds Yukon gold or red potato, cut into 1/4-inch slices
  • 1 cup vegetable broth
  • 0.5 teaspoon salt
  • 2 cups shredded sharp Cheddar cheese, divided
  • 3 tablespoons heavy cream
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon nutmeg
Instructions:
  • In a multi-functional pressure cooker (like an Instant Pot), mix together potatoes, broth, and salt. Seal the lid securely, select high pressure following the manufacturer's guidance, and set the timer for 1 minute. Let the pressure build for 10 to 15 minutes.
  • Preheat the broiler with an oven rack positioned 6 inches from the heat source.
  • Quick-release pressure following manufacturer's instructions, for roughly 5 minutes. Remove the lid and transfer potatoes to an 8-inch square baking dish.
  • In the pressure cooker, blend 1 1/2 cups of Cheddar cheese, cream, garlic powder, pepper, and nutmeg with the remaining liquid. Choose the Sauté function and simmer until smooth and creamy, approximately 5 minutes.
  • Evenly coat the potatoes with the sauce and generously sprinkle the remaining 1/2 cup of Cheddar cheese on top.
  • Broil until the cheese turns golden brown, approximately 5 minutes in the preheated oven.
