Elevate sweet potato with this simple 5-ingredient recipe for a truly spectacular dish.
Ingredients:
  • 4 (about 300g each) gold sweet potatoes
  • 300g pkt Coles Grain Mix Moroccan
  • 60g pkt Baby Spinach
  • 40.00 ml Greek-style yoghurt
  • 62.50 ml coriander sprigs
Instructions:
  • Pierce sweet potatoes all over with a fork, then place on a microwave-safe plate. Microwave on high, turning occasionally, for 10 minutes until tender. Let cool for 5 minutes before further use.
  • Prepare the grain mix according to the package directions, then combine it in a large bowl with the spinach and toss together.
  • Carefully slice a lengthwise slit on the top of each sweet potato without cutting all the way through. Gently press on the base to reveal the flesh and use a fork to lightly mash it. Finally, top each sweet potato with the grain mixture.
  • Mix the yogurt with 1 tablespoon of warm water in a small bowl, then pour it over the sweet potatoes, sprinkle with coriander, and season to taste.
