Elegant sweet potato-stuffed oranges with buttery pecan topping. Perfect for any meal!
Ingredients:
  • 6 medium oranges
  • 3 cups cooked, mashed sweet potatoes
  • 1 cup unsalted butter, softened
  • 0.25 cup orange juice
  • 2 large eggs, lightly beaten
  • 1 tablespoon grated orange zest
  • 1 cup brown sugar
  • 1 cup chopped pecans
  • 0.5 teaspoon all-purpose flour
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Trim 1/2 inch from one end of each orange, scoop out the flesh, and place the shells in a deep casserole dish.
  • Combine sweet potatoes, white sugar, softened butter, orange juice, eggs, vanilla, and orange zest in a large bowl. Use an electric mixer to blend until smooth, then transfer mixture into orange shells.
  • In a small saucepan over medium heat, melt 1/2 cup butter with brown sugar, pecans, and flour. Stir occasionally until butter melts and sugar dissolves, about 3 to 4 minutes. Spoon the mixture over the oranges in the casserole dish, then pour in water to reach 1/2 inch around the orange shells.
  • Place in the hot oven and bake for 30 minutes.
